Does my company data get used to train someone's model?
Not under the arrangements I build. Retrieval means your records are looked up at the moment of the question rather than absorbed into a model. Which provider sees what, and under what terms, is written down as part of the build rather than assumed.
How do I know it is giving correct answers?
By checking it against questions you already know the answers to, repeatedly, as it changes. Every answer also cites the record it came from, so a person can verify any individual response without taking the system's word for it.
